Item
: Absinthe Kit, consisting of Two bags with organic herbs for making absinthe. First bag contains one ounce of USDA Organic Wormwood for the first brew stage. Second bag contains the remainder of the pre-mixed organic herbs needed for absinthe. All herbs are USDA certified organic. If available and in season (spring to late summer usually), I will throw in some
fresh
organic (not certified) wormwood from my Night
Shade
Farm along with the primary bag of dried wormwood.
One of my long-time, popular, exclusive items from an old European recipe. Absinthe was a traditional favorite of many in the old Bohemian crowd of famous artists and writers. This drink was once banned in the USA due to untrue fears about the
thujone
component of wormwood, the major ingredient. However, it is the high alcohol mix that is the real culprit in its punch, so temper accordingly.
The various herbs add a complex yet decisively
bitter with an anise twist
component to this traditionally European, herbal alcohol. Not for the faint of heart.

:
In a glass container, add the wormwood pack(s) (including fresh if available) to one quart of mixed 151 Rum and pure Vodka (or Everclear for more punch), or any other alcohol of your choice. Set aside in a
dark
place for (4-10 days) four days
minimum
(you get the majority of the
thujone
and milder flavor) to up to 10 days
maximum
(all the
thujone
, but
also
a
stronger bitter
taste). Just let it sit and marinade, stirring once daily.
Strain and press out the soggy wormwood. To this liquid, add all the herbs and spices in the second pack mix. Wait four more days (stir daily). Then finely strain these herbs out, and bottle your absinthe. More alcohol can be added now to recover what was lost to the herbs.
Best drunk mixed half and half with cold water or on the rocks. Add a teaspoon of sugar if needed to counter the bitterness. Or dribble a little in a tall glass with ice and a shot of cranberry juice.
Keep in mind that true traditional absinthe is twice distilled at the end of the two basic steps, which makes for a more authentic and pure product than what this kit can do. Some home brewers alter my recipe and add more fresh herbs such as cilantro or lavender as flavor modifiers, or even stevia to counter the bitterness.
Straining can be done with a fine mesh wire colander, cheesecloth, and/or a clean nylon stocking, or any combination thereof. The last strain must be the finest.
