    Description

    "I installed this burner in my MAM 505 Italian oven in my restaurant. The wood fire was a mess, soot on the ceiling of the oven, wood chips everywhere, and ash. The consistency of the heat with the Drago flame, which is one big huge flame that covers the ceiling of my oven, which is 5' across inside, is a huge improvement over the lateral heat of the wood fire. It maintains better floor temps, quicker recovery, and I have never had any problems or issues with it. I have never even had to readjust anything. It is 220 volt, so I hooked it up to a small transformer. No problems, just great pizza. I have made about 100,000 pizzas with this rig. It looks incredible too, not just a little row of flames like a bedroom heater, this is a flame thrower like a DRAGON. Great fun to show people how it works."

    Combustion relies on natural chimney draw like wood does; the flame created by Avanzini's special total pre-mixing firing system is well diffused and very bright.

    Silent operation:
    The Drago is extremely silent and operates continuously and unlike the blown-air burner, it has no fan, which is a source of noise and requires frequent maintenance. Drago is the only burner that does not protrude inside the oven because it is installed inside the floor of the oven; the advantage of this is enormous because it is not visible to customers and does not get overheated like other burners where the flame diffusers need to be replaced periodically.

    Can I install a gas burner in my wood-burning oven?
    Of course! The  Drago can be installed in any make and type of existing wood-burning oven. Please view images. The gas burner is custom made for each oven in Italy and may take 2 - 4 weeks for delivery.
    But will I have to stop work?
    Absolutely not. All you need to do is have the gas pipe brought to under the oven and then, on a closing day, you can install the burner, also by making a hole in the baking floor of the oven to insert the burner

    Will the taste of the pizza be different
    ?
    All our pizzeria owner customers have confirmed that the taste is practically the same.
    But will customers have misgivings
    ?
    Most of them will not notice anything since Drago is the only burner with a flame very similar to that created by wood and is invisible to prying eyes, and very attentive, and we would say almost professional, customers will appreciate that the pizza is certainly better because it is baked evenly and never burnt and also has no ash on it, which we know is not at all healthy

    How long does it take to reach operating temperature
    ?
    On average just over an hour, from one day to the next
    .
    But is there a saving compared to wood
    ?
    Definitely, ranging from a minimum of 15% to 40%.
    Also, there are no expenses for cleaning the chimney or for rat extermination, and the walls of the room no longer get dirty

    Is it complicated to use
    ?
    It is much easier than with wood. Drago does everything itself, is turned on with the switch on the control panel and manages the set baking temperature automatically

    Can I also use wood despite the fitted burner
    ?
    This is another advantage of Drago compared to other burners. Even if you burn wood, it will not be damaged, will not fill with ash and will not be deformed because it is the only one that stays on the baking floor

    What if I wanted to use only wood
    ?
    Drago allows you to do this too. Just insert the plug that completely isolates the baking floor from the burner body

    I have seen completely dark gas ovens and some even have a lamp to illuminate the baking floor. What about Drago
    ?
    Its flame is very bright, even brighter than a wood flame because it is soft and highly radiating and reaches the center of the oven dome and therefore its soft tongues of flame send light to all areas of the baking floor.
    Why should I buy a Drago rather than another burner on the market
    ?
    Because no company has specific experience of burners for baking like Avanzini bruciatori srl that has been manufacturing and installing burners in bread ovens since 1960, because the other burners are installed in heating boilers or in aluminium and bronze smelting works and it is glaringly obvious that a flame for smelting metal is not the most suitable for baking pizzas.
